APPLE PIE RECIPE
It’s a wonderful harvest time right now in August with fruit and berries just waiting to be picked. I am a true pie-addict and the most delicious pie is of course a classic cinnamon scented apple pie with homemade ice cream. When I lived in the country, we had old apple trees and every autumn my Mum and I had apple-mania. We picked a lot of fruit to store for the Winter. We turned the Summer apples into the delectable apple pie and apple juice that we put in the freezer for safe keeping.
In this recipe I’m showing you how to make a classic Swedish apple pie with lots of butter, just as it should be :) Together with the pie, I serve modern version of homemade ice cream – light and delicious… enjoy! :)
Apple pie with cinnamon ice cream
Pastry:
275 g butter
100 ml granulated sugar
300 ml flour (or gluten free flour)
1 tsp baking powder
1 tsp salt
Filling:
6 apples
200 ml hazelnuts
1 tsp ground cinnamon
2 tbsp granulated sugar
Pastry: Melt butter and add all other ingredients directly into the pan. Pour out 3/4 of the dough into a pie plate.
Filling: Core and cut the apples into slices, chop the hazelnuts and mix the cinnamon and sugar. Place the apple slices on the dough in the pie plate. Sprinkle with cinnamon sugar, chopped hazelnuts and crumble over the rest of the pastry over the apples. Bake in oven approx. 30 minutes.
Serve with custard or this lovely cinnamon ice cream…
CINNAMON ICE CREAM:
(Good LCHF recipe)
400 ml whipping cream
200 ml plain yogurt, 3% fat
2 teaspoons ground cinnamon
100 ml granulated sugar
Cinnamon Ice Cream: Whip the cream. Then mix all ingredients in a plastic container with a lid and leave in the freezer for at least 3 hours. Remove the icecream 15 minutes prior to serving the pie.

This lovely apple pie tastes best in the open air with good company and the smell of freshly harvested fruit :)
